After 10 years of working in interior design, and a stint as a stay-at-home mom, Sofia Demetriou decided to take a chance at her passion—and the business her family has been in for more than 100 years: baking. “I came up with the idea of the stuffed cookies to make more-portable and easier-to-eat desserts for our dessert tables,” she says. “And so, the concept of ‘every dessert baked into a cookie' was born.” Duchess Cookies has grown enormously since then, with eight locations throughout New York and Pennsylvania, five partner locations and six more opening up this year. Duchess's newest location in Downtown Easton brings these delicious desserts to the Lehigh Valley. “From breaking it open in the middle and seeing the ooey, gooey centers, to that first warm melty bite, we hope that our patrons enjoy not only the diversity of flavors, but the quality and the love that we put into every single bite.”
