What was once known at Easton’s Simon Silk Mill as Mario’s Italian Eatery is now The Local Eatery. “When I took full control of operations, we decided to rebrand with the concept of ‘modern Italian dishes with a fusion flair,’” says owner David Siwy. “Half of our menu is Italian, while the other is a blend of American-style dishes and dishes from other cultures.” Siwy hopes to focus on local schools and historic sites in their rebranding, reflected in the eatery’s theme and ambiance. Executive Chef Salvatore Cardamuro will continue to make customer favorites like the 49%/51% Burger (49 percent beef, 51 percent bacon) and the Margherita Pizza, but there will also be new items added to the menu, such as the Butternut Squash Pizza and the Nachos Es Mio. “We will still be working in conjunction with County Seat to provide food for their patrons,” says Siwy. They are excited to roll out a catering menu for any occasion, customizable to fit all needs.
