Blueberry & Blackberry Crumble
A delicious, easy and healthy dessert that can be enjoyed in any season!
2 cups fresh blueberries2 cups fresh blackberriesJuice from a fresh lemon1 cup almond flour¼ cup chopped walnuts4 pitted dried dates½ teaspoon cinnamon¼ teaspoon salt¼ cup coconut oil, melted¼ cup sliced almonds
Preheat oven to 350° degrees.
Place the berries in a 9-inch x 9-inch baking dish, and squeeze juice from half of the lemon over and mix.
Press the fruit gently into place and rest at room temperature.
In a food processor, combine the almond flour, dates, walnuts, cinnamon and salt. Pulse until combined.
Add in the coconut oil and process on high for 5-10 seconds, or until thoroughly combined.
Pour topping into a bowl and mix in the sliced almonds.
Sprinkle topping over the berries and lightly press into the fruit with a spoon.
Bake for 30-40 minutes, until browned.
Frozen Banana Bites or Chocolate Banana Bites
1 bananaAlmond butterRaw cacao
Slice your banana into an even amount of round slices – about ¼” to ½” thick.
Spread a desired amount of almond butter on one slice, and use another to make it into a “sandwich.”
Place your banana bites in the freezer for a half-hour. You can keep them in there in a sealed container for snacking all week long!
For Chocolate Banana Bites
Follow Step 1 above then roll slices in raw cacao or unsweetened cocoa powder.
Place in freezer and keep in a sealed container and enjoy when you need a bite of frosty bite of sweet chocolate.
5-Ingredient Avocado Pudding
Serves 1
½ avocado, mashed1-2 tablespoons unsweetened cocoa powder or raw cacao1 teaspoon raw honey1 teaspoon sunbutter (or other nut butter)pinch of saltdark chocolate chips (optional)
Mash up your avocado.
Add in your cocoa powder, raw honey, sunbutter, pinch of salt and mix thoroughly.
Enjoy.
If you want to add a protein boost you can add a tablespoon of protein powder to make it even more complete.
Note: For an even creamier texture, puree in your food processor.
Ryan Wilder's Wicked Easy Ketchup
Approx. 12 ounces tomato paste1½ cups water2 Tablespoon vinegar½ teaspoon garlic powder½ teaspoon onion powder¼ teaspoon all-spice
Combine all ingredients in a small saucepan. Simmer for a few minutes and stir often. Transfer ketchup to a glass container and refrigerate.
