The crack of the bat, the screams of the fans and the smell—the smell of the corn. If you have attended a Lehigh Valley IronPigs game at Allentown's Coca-Cola Park recently, you have no doubt noticed that heavenly smell and seen multitudes of game goers walking about the stadium, cob in hand.
The folks at Aw Shucks Roasted Corn are responsible for this incredibly delicious taste of summer and credit it to their time-tested recipe that dates back to 1998. What's in the recipe? Aw Shucks owner David Emili says only wife Jennifer knows for sure because she developed it with a secret blend of “southwest spices” and Parmesan cheese.
The result is an incredible mouthful of summer wonderfulness that you will also find annually at Musikfest and Celtic Classic.
Emili says they start out with only the sweetest ears (local, whenever possible) and roast them in the husk for about 20 minutes in a 600-degree roaster. Once roasted, the ears are then bathed in the finest grade butter and then coated with the spice and cheese blend. Ask anyone who has indulged about the taste and they will respond at first with a slight pause and then a look of utter delight at the mere thought of this all-at-once juicy, sweet, salty, spicy combo that is apparently unforgettable.
