The Flying Egg's Dutch Baby Pancake is nicknamed Worth The Wait, and for good reason. “It takes a good 25 to 30 minutes to cook, but it's oh so worth it!” says Cara Paredes, regional manager for 3PA Restaurant Group, which operates Valley favorites like Tapas on Main, Cachette Bistro, Urbano Mexican Kitchen & Bar and Mesa Modern Mexican.
Made with eggs, flour, butter and milk, Paredes says, “The eggs are what makes it more of a chewy pancake consistency and how it rises on the edges and perfectly falls in the middle.”
Year-round, the dish is offered with berry coulis, blueberries and powdered sugar, but
Paredes explains that they often offer flavor variations based on season. “We ran a pumpkin-flavored one for fall,” she says, and gingerbread for the holiday season.
Paredes recommends pairing your pancake with a nice boozy coffee drink this season, referencing the recently featured salted caramel apple cider mimosa as a perfect pick.
