Owner of Little Miss Korea, Lobynn Cha was introduced to kimchi fries on a trip to Austin, Texas, in 2017, when a Korean-Mexican fusion food truck was serving them. “There were lines around the truck and down the road,” she says. “For good reason.”
“They were delicious—topped with chunks of meat, a special sauce and a mild pico de gallo,” says Cha. When she returned home from her trip, she tried to recreate the sauce and, in her opinion, made an even better version.
In June of 2018, Cha opened up shop at the Allentown Fairgrounds Farmers Market, where her kimchi fries were an instant hit. Now, they're also available at the Downtown Allentown Market. The crinkle-cut fries come topped with shredded cheese, choice of meat (garlic ginger chicken, bulgogi beef or spicy pork), gochujang aioli (a blend of gochujang, Korean red pepper paste, chipotle peppers and mayonnaise), chopped kimchi, sesame seeds and scallions.
Cha recommends enjoying them with one of their homemade drinks, like the Korean Green Plum Tea or their Berry Hibiscus Tea with blackberry. They also have alcoholic beverage options, which are available in trendy drink pouches.
This winter at the Downtown Allentown Market, patrons can look forward to weekly soup specials.
