Crunch. Melt. Yum. The three words that say it all about this traditional Irish dinner table staple now being served for the first time at McCarthy's Red Stag Pub & Restaurant in Bethlehem. Simple ingredients like flour, baking soda, egg and butter are used to create this all at once crispy, slightly salted pancake with a hot, soft center of mashed potato. Grilling one up, however, should be handled only by the experts like Chef Kelly Thos. Shay and his team at the tearoom turned grand gathering space—last year they added a full bar—hence the Red Stag Pub, and enlarged the dining area. So raise a pint of Magner's Pear Cider or a tall, cold Harp and make that almost impossible choice between the sour cream and the applesauce accompaniment. Hearty lads and lasses know better and just enjoy both. Cheers, mates!
