Tequila Marinated Blackened Tuna

This small plate of enormous tastes found on the menu at The Broadway Social in Bethlehem starts out with a generous portion of freshly caught tuna that is slowly marinated in a bath of fine tequila. The fish is then pan-seared until perfectly blackened leaving a rare, sensuous core of tuna that melts in your mouth along with its appetizing accompaniment of fresh-roasted pineapple salsa, grilled asparagus and a zesty sampling of black bean hummus.
