2–2 ½ ripe (not overripe) Hass avocados (about 3/4 cup)½ cup organic coconut palm sugar½ cup dark cocoa powder1 large egg, lightly beaten½ tsp. baking sodaHandful of small dark-chocolate pieces or morsels
Remove avocado flesh and mash until all lumps are gone. Mix in remaining ingredients until well mixed (don’t overmix). Drop by cookie scoop or teaspoon onto parchment paper-covered cookie sheet. Bake at 350°F until cookies are firm in center.
Refrigerate, and enjoy.
