Ingredients
5 large potatoes
1 large onion
3 eggs
1/3 cup flour
1 tsp. salt
¼ tsp. pepper
2 tsp. baking powder
¾ cup oil
Directions
1. Grate or puree the potatoes and onion.
2. Put into a bowl and then add other ingredients and mix everything together—except for the oil, which is used for frying.
3. Heat the frying pan with the oil on medium to high heat and, when it is hot (and sizzling!), drop the potato mixture into the frying pan with a tablespoon.
4. Each latke (potato mixture) should be the size of a little pancake.
5. Fry on one side until brown then turn and fry on the other side.
6. Serve them fresh out of the frying pan with sour cream or applesauce.
TO FREEZE:
Place the fried latkes on a cookie sheet and cover with plastic wrap and then tinfoil.
TO SERVE AFTER FREEZING:
Remove from freezer for a half hour, then place in a preheated oven at 350 degrees for approximately a half hour or until sizzling, and serve.
Makes about 25–30 latkes
